Thai Glass Noodle Salad

This recipe is for those of you who love a really spicy salad, Thai style! If that’s you, lets get started!!

Ingredients for Yum Woon Sen

Ingredients

  1. Glass noodle
  2. Chilli
  3. 1 TSP Brown sugar
  4. Lime
  5. Shallot
  6. Onion
  7. Tomato
  8. Vietnams sausage
  9. Celery
  10. Spring onions
  11. Minced pork
  12. Black pepper
  13. Himalayan salt
  14. Hot water

How to prepare…

1. Add water in to a small pan and turn up to a high heat. Add minced pork and sprinkle in some salt to taste and stir until the meat is cooked.

Then pour it in to a big bowl.

2. Boil the Vietnamese sausage for about 3 or four minutes. Boil the glass noodles for about 2 or three minutes.

3. Now add all the ingredients in to a mixing bowl, first add little of the hot water + salt + black pepper + brown sugar + chilli and then mix it all together. Next add the minced pork + Vietnamese sausage + onion + tomato + shallot + lime + glass noodle and then mix it again. At this point you should taste it. If you really love it spicy, add  some more chili, but for me just two is enough!

Finally, add the spring onion and celery and give it a quick stir, now it is ready to serve!!

Ingredients to Make Sour Soup

Learn how to make delicious Thai sour soup the easy way with Katae. Cooking yummy Thai food is fun and healthy especially when many of the ingredients can be found in our garden. Here’s a list of things you will need:

ส่วนผสมในการทำ แกงส้ม มีดังนี้
1). ผักกาดขาว
2). ดอกแค
3). ถั่วฝักยาว
4). หอมแดง
5). กระชาย
6). พริกแห้ง
7). มะขามเปียก
8). น้ำตาลปีบ
9). พริกแกงส้ม
10). เกลือ 
11). มะรุม

How to Prepare and Cook Sour Soup

ขั้นตอนในการทำนะคะ
1). เริ่มจากการล้างผักหั่นผัก
First start by cleaning all the vegetables and cut them.

2). แกะเนื้อปลาสำหรับตำกับเครื่องพริกแกง และแยกสำหรับใส่เป็นชิ้นๆตอนต้ม
(เนื้อปลาเราจะใส่ลงไปเป็นอย่างสุดท้ายจะได้ ไม่เละ แต่ถ้าใครจะลวกก่อนและแยกใส่ที่หลังก็ทำได้เช่นกันนะคะ)
Second, take the fish meat from the bone and then separate to blend with red curry paste and boil it in the soup.

แกงส้มปลา เนื้อปลา Sour Soup fish

3). นำน้ำใส่ในถ้วยที่มีมะขามเปียกและขยำให้น้ำมะขามเปียกผสมกับน้ำ (เมื่อเสร็จจะเหมือนในรูปด้านล่างนะคะ)
***อย่าลืมนำเม็ดมะขามทิ้งด้วยนะคะ***
Mix water with tamarind and squeeze it until it look like the photo below.
***Don’t forget to take the seed of the tamarind out too***

แกงส้ม น้ำมะขาม
4). ตำเครื่องพริกแกงส้มกับ พริกแห้ง กระชาย หอมแดงให้ละเอียด และน้ำเนื้อปลาบางส่วนเข้ามาตำรวมกันจะได้ถึงรสชาติ
Now using a pestle and mortar mash the red curry paste with dried chillies, fingerroot, shallot and fish untill they are mixed together.

 

แกงส้ม ตำพริกแกง แกงส้ม ตำเสร็จแล้ว
5). นำหม้อใส่น้ำตั้งไฟให้เดือดแล้วใส่เครื่องพริกแกงที่ตำไว้
Add the water in a pot and stir in the mash from No.4 until it’s melted.

6). ใส่เนื้อปลาและผักที่เตรียมไว้ลงไปในหม้อ และปรุงด้วยน้ำตาลปีบ, เกลือและมะขามเปียกและทิ้งไว้สักพัก
(รสชาติปรุงตามใจชอบ)
Add fish and all vegetables into the hot pot and then add palm sugar, salt and tamarind juice and boil it.
(You can taste and add more a what you fancy to your liking)

7). เสร็จปิดเตา พร้อมตักเสิร์ฟร้อนๆ คู่กับไข่เจียวก็อร่อยไปอีกแบบ :)
